Paleo Coconut Cod

With the coconut crusted cod, I prepared a side of asparagus. Most people expect a breaded fish to come with chips. Aka fries. Aka paleo sweet potato fries. Combine the coconut flour, ginger powder and salt on a plate or shallow bowl. Dip the cod strips into the coconut milk, then the coconut flour mixture, back into the coconut milk, and finally into the shredded coconut, paying special attention to creating a thick breading. This is on our menu for tonight, no question. I love a good fish recipe because fish is soooo good for us, especially those on the paleo autoimmune protocol.

Fresh, wild cod is delicious, and even better when they are local catch. The coconut flour gives the cod a lovely light, crispy coat, and also adds a hint of sweetness.
